galactic has developed a new powder form of lactic acid for use in bakery products and mixes, which can avoid the need for liquid lactic acid to be added to the dough. lactic acid is used by manufacturers of bakery products to control the acidity of the dough and to act against mould. however most of the lactic acid available to industry is in liquid form, which means it has to be added to the dough and cannot be used in mixes. more

galam group has signed an agreement with czech company vuc services to develop new liquid sweetener blends, as part of its strategy to spread its reach into new european markets. the israeli company is pursuing a strategy of extending the reach of its liquid sweetener business in europe. in 2004 it formed a subsidiary in germany called eurosweet, and in october 2007 it bought a 51 per cent share in spanish liquid sweetener and liquid sugar firm atomer. more

iron nano-structures open up food fortification opportunities

the continued development of nano-structured iron compounds may allow for innovative fortification of wheat and rice-based foods, suggests new research from switzerland. by using a flame aerosol technology researchers from the swiss federal institute of technology (eth) in zurich report that the resulting nano-structures show high iron solubility and low reactivity in foods, making them promising for food fortification applications. more

roquette partners solazyme to make microalgae mainstream

roquette has announced a tie-up with renewable oil and bioproducts firm solazyme to develop and commercialise microalgae-derived food ingredients from 2011. traditionally known for its focus on carbohydrates such as starch and sugar, roquette has invested heavily in microalgae since 2008 and the start of its ‘algohub’ research programme with 14 research partners, which has developed algae-based extracts such as omega-3, lutein and astaxanthin for food, food supplement and feed markets. more

coles extends sow stall ban to imports

fraud “rife” in mediterranean bluefin tuna fishery

results of an independent investigation launched this weekend have revealed a complex international black market in east atlantic bluefin tuna worth an estimated $4 billion, with many cases of quota violation, widespread underreporting, use of banned spotter planes, catching of undersized fish, and even governmental misreporting coming to light. reporters from the international consortium of investigative journalists (icij) have spent eight months investigating the fishery and trade of the highly prized seafood commodity, which is also classified as an endangered species. more
